Ingredients for Brownie cake
- 115 grams (1/2 cup or 1 stick) unsalted butter
- 300 grams (2 cups) dark chocolate (45-70% cocoa), broken into pieces
- 200 grams (1 cup) caster sugar or granulated sugar
- 4 large eggs
- 70 grams (1/2 cup) plain flour or all purpose flour, sifted
- 40 grams (1/2 cup) cocoa powder, sifted
- Pinch of salt
- 35 grams (1/4 cup) chocolate chips, optional
- 30 grams (1/4 cup) walnuts, roughly chopped, optional
How to prepare
Butter an 8-inch round springform cake pan and line it with baking or parchment paper. Preheat the oven to 170°C (340°F) / 150°C (300°F) fan-forced. In a large heatproof dish, combine the butter and chocolate. Microwave for 30 seconds, stirring every 30 seconds, until melted and smooth. Allow to cool slightly.
Meanwhile, gently separate your eggs, making sure no egg yolk gets into the egg whites. In a large mixing basin, combine the egg whites and sugar, and beat with an electric mixer on medium speed until thick and voluminous. This might take a long – perhaps 5 minutes. The meringue should be firm enough to keep its shape when you remove the whisk.
Add the egg yolks to the melted chocolate mixture and gently swirl to incorporate. Fold in the flour, cocoa powder, and salt until smooth. Gently fold in the beaten egg whites to the chocolate mixture. Then stir in the chocolate chips and walnuts (if using). If you over-mix the egg whites, they will lose all of their air.
Pour the batter into the prepared cake pan and level the top. Place in the oven for 40-50 minutes, or until a skewer inserted into the centre comes out largely clean. Keep in mind that this cake will contain cracks, which is just OK.
Leave the cake in the pan, but set it on a cooling rack to cool entirely. When the cake has cooled, serve it immediately or place it in the refrigerator to become lovely and fudgy. To serve, dust with cocoa powder.

Dark chocolate: Use an excellent grade dark chocolate with a cocoa content of 45-70 percent.
My preferred method is to place the cake in a springform pan. This method works best for cakes on plates or patterns. I take out my 12-inch round springform pan, place the cake inside, and then place the springform pan on a flat area in my vehicle on a shelf liner. (Typically, the back or floor chairs are too curved) When you arrive at the event, simply bring in the springform pan and remove the outer border! More times than I can count, this has worked flawlessly.
Cakes travel best at cold temperatures, so dress warmly if you’re taking a lengthy vehicle journey. If the temperature in your home is too high, the icing may melt and slip down the cake. If you choose the box approach, you may also wrap ice packs around the base of the box. Bring a “repair kit” if you are able.
